Homity Pie

An old English country recipe – it should really be mashed potato, onions and cheese in a pastry case, but we’re eating 55lbs of potatoes so it’s nice to add a few other things to ring the changes. This one had chopped leeks, sliced mushrooms, grated carrot, grated cabbage and garlic fried in a little oil til soft,  added to mashed potato with a couple of eggs and some strong cheese – English cheddar preferably – and then dolloped in a pastry case (already part baked) and cooked in a hot oven until cooked through and slightly browned on the top – about 45 minutes. Lovely winter comfort food. Probably should serve it with something green. Or red. On another note entirely, it’s Beth’s birthday today: Happy Birthday Beth!
