Endless possibilities……

I realise that I haven’t really given the humble potato when mashed the credit it deserves. I’ve just referred to it as the base for something in a casual, offhand manner, without thinking about its versatility.  Mashed potato – especially if you have the variety of potato suited to mashing –  is far more than just an accompaniment to baked beans, fried tomato. mushrooms and sausage  – though admittedly this combination has its charm.  A simple potato mash – no butter, milk, salt or pepper needed (why gild the lily?) – can offer endless possibilities. Maybe.
