Baked egg and mashed potato

This may seem pretty ordinary, but it hits the spot – mashed potato topped with an egg  in a blini pan shoved in the oven till the egg’s done – by which time the potato on the bottom will be lovely and lightly crispy. Doesn’t take long if you have some mashed potato to hand.  Add a nice lot of salt and pepper and a green salad – or just eat it out of the pan on its own.

    Egg looks bit underdone, nice try though Kate, garnish might have been nice .Looking forward to tomorrows ….no wonder you never ring me if this is what youre up to !

        Suffering potato blog withdrawal,lots of people like runny egg they just havent discovered your wonderful blog and are therefore unable to offer runny egg support ..,or have you used all potatoes?love Jess x
