Chinese curry spice potato burger thing.

Chopped onions, ginger root and garlic, with one or two teaspoons of cayenne pepper (depending on how hot you like things or, indeed, how hot the cayenne pepper is), a large pinch of cloves, a tsp each of coriander, cumin, and ground cinnamon thrown in a pan and cooked for a couple of minutes.  Then add some finely chopped fennel – the bulb rather than the feathery leaves –  and a splash or two of  water.  Mix in mashed potato and add salt to taste and make into burgers.   Dip then in a batter made with gram (chick pea) flour and water  – the consistency of  single cream is about right –  before frying in a little oil. I would have put a garnish on, or serving suggestions, but I don’t like to presume – and it might detract from the rather fine plate – another pre sell-out Dartington Pottery plate.
