Potato Candy

We were deciding what to cook when Arlo said, “Hey Mum, I’ve found a recipe for potato candy”. Well, this was an unmissable opportunity to explore the endless possibilities of mashed potato. We were quite excited.  There’s not a lot of potato – one part mashed potato six parts icing/powdered sugar, and about 1tsp vanilla extract, but for the purposed of a potato blog it’s a fine potato recipe.

Gradually add the sugar to the potato, until it becomes  kneadable, add the vanilla extract,  knead the dough and then put in the fridge to chill for about an hour.  Roll the candy into balls and melt some chocolate – we used dark, fair trade chocolate – to dip the candy in.  Present on a pretty plate.
