Fried mashed potato and lentils – egg and watercress on the side

This was lunch for the beloved, Poppy, Arlo and me. The kitchen’s in a state of upheaval because the beloved’s fixing the sink, so this was a quick fry up of mashed potatoes and lentils with a fried egg and watercress. We don’t often eat lunch together on a weekday because of school and work so it was a bit of a treat, rather than a hurried sandwich.

The lentils were brown lentils soaked for a bit then cooked until soft and then doused in olive oil, garlic, salt, pepper and a bit of lemon juice while still warm.  There’s something very satisfying about them anyway and Arlo loves them just like that, but when they’re mixed with some mashed potato and fried they become something else. Maybe it’s just because it’s a way of using the potatoes.

Nice pretty much in focus photo. The egg white could have been a little more circular if we’re being picky – it’s because I cooked four in a pan at once. The willow pattern plate looks ok though.
