Potato wedges with Smoked Paprika

Christmas has taken its toll on our 55lbs of potatoes and the bag is now pretty near the end. The beloved its getting a little tetchy, wondering whether to go back to the farm shop and pick up another bag – or another bag of a different variety (the ones we have are Estima) –  or whether to have a potato break. Only time will tell what will happen as he can be a law unto himself…

However, over the last couple of days we have eaten and enjoyed lots of potato wedges – potato wedges cooked with herbs, potato wedges cooked with salt and lots of black pepper, potato wedges sprinkled with grated cheese, potato wedges cooked with salt and sprinkled with vinegar. I do feel that there have been several missed photo opportunities, but, as with a plate of mashed potato, one potato wedge looks very like another. This is a possible exception. Potato wedges cooked with Spanish smoked paprika – gives a smoky taste and a lovely reddish orange hue. We ate these with a puff pastry pie and garlic and parsley tofu dip (which will probably feature in another post).

Peel potatoes and chop them into wedges. Put in a bowl and add two or three teaspoons of smoked paprika and a teaspoon of salt and mix it all together with your hands until the potatoes are coated. Heat some oil in a large roasting pan, and add the potatoes.  Bung in a hot oven for about an hour – you might need to agitate them a bit so that they don’t stick. Serve in a nice bowl.
