A fine cup of coffee and a piece of Christmas Cake (with potato candy icing)

“This isn’t a blog,” said Poppy “You’re writing a novel in little bits and you don’t know where it’s going.”  Cutting! There I was thinking I was a window on my world. Oh well.

Coffee and cake is always a consolation. Christmas cake in this case with potato candy icing – nice icing – not too hard and it doesn’t taste of potatoes at all – see potato candy post for recipe. Lots of marzipan and a nice rich fruit cake too.

Easy to make: 5 oz each of of currants, raisins, chopped prunes and chopped dried apricots; 4 oz each of of dried cranberrries, blueberries and cherries; 1 grated apple;  8oz each of soft butter, self raising flour, soft brown sugar; 4 eggs; 1tsp each of  powdered cinnamon and ginger. Mix butter and sugar first then add eggs and then add everything else. Fits in a deep 8″ round cake tin. Cook in a slow oven(300f, 150c) for an hour and a half, possibly longer.

Doesn’t have to be just for Christmas.

    why do you have humour as a tag?does that mean you are officially humourous,who decided this ?…….can i be humourous too?
