Hope it’s not parsnips…

Carlo came in to the kitchen. “Something smells really nice,” he announced, “Cinnamon?” and then he looked at me. “I hope it’s not cinnamon parsnips”  he said, warily, his eyes challenging.  “I’m sick of parsnips especially when you cook them with cinnamon, because it’s so disappointing! I really hope it’s not cinnamon parsnips!”  He was almost on the verge of tears.

We were interrupted by Peaches the rabbit who chose to punctuate Carlo’s rant by throwing her food bowl upside down, scatterings its contents.  CArlo chose to view this as a supportive comment on parsnips (although Peaches didn’t have any parsnips in her bowl) “Even Peaches is hoping for something better” he said.

“Hope” I thought. “That’s this weeks’ photo challenge…” and I went to get the camera.

“So” said Carlo following me out of the room, “Is it cinnamon horrible parsnips making the nice smell?”

His hopes were not to be dashed. To Carlo’s delight it was a cinnamon topped chocolate chip cake making the kitchen smell so enticing (from now on we’re calling it “hope cake”).

Easy cake to make – mix together 4oz soft butter, 8oz sugar, 10fl oz yogurt and 2 large eggs  (use 3 eggs if you don’t have large ones or add more yogurt). Mix in 4oz ground almonds, 12oz self raising flour and 8oz of 70%cocoa solids chocolate, chopped. The mixture will be quite stiff. Make a topping of 3oz melted butter, 3oz sugar and two heaped teaspoons of ground cinnamon mixed together. Put the cake in a  9″ deep sided cake tin, greased and floured, and spoon the topping over it. Bake for about an hour at 180c/350f.

    That cake looks fabulous and lucky for him – it wasn’t cinnamon parsnips!
