Apparently 40% of people in Britain don’t know what goes to make a pancake. That’s depressing. But not as depressing as attempting to cook a pancake on an aga.

I always dread pancake day, because an aga is a lousy cooker for making pancakes on. The hot plate loses heat quickly if it’s in use for too long and because the aga uses stored heat, it doesn’t warm up again quickly. The bottom of your pancake pan has to be really flat and have good conductivity, or the pancakes won’t cook and if too many people want pancakes it’ll take forever. Halo bravely used to make pancakes on the aga. She used to flip them and make nice fillings to go in to them too sometimes, but it was always a strain; when she went to university and first cooked pancakes on an ordinary oven she was amazed how easy it was. Rang me up to tell me.

So normally instead of a large thin pancake that you can fold over, I make pikelets, which are Welsh small pancakes. There’s not so much stress involved. My mother (who’s from Wales) has a bakestone which is a large, flat, heavy lump of cast iron you put on a fire (or a gas hob) to cook pikelets – and other things like bakestone cakes (or Welshcakes). I can use the simmering plate of the aga.

You need to mix 5oz plain four, an egg and 10 fl oz milk really well so that there are no lumps (whisk it) and leave it in the fridge for a half an hour to rest (if you have time). When you’re ready to cook them, lightly coat the aga simmering plate with a little oil – (OK heat a non stick frying pan which is very lightly coated in oil) and drop spoonfuls of the mixture onto the surface making sure they aren’t too close. When the pikelets have bubbles on the top they are ready to flip over for a minute to cook the other side. Repeat till all the mixture’s gone. Serve with lemon and sugar, or maple syrup and yogurt, or all of the above. They aren’t pancakes, but they’re a pretty good alternative.
