Things could be worse…

The beloved, Arlo and I went to Taunton today to pick up my pictures from the Botanical Art exhibition – minus the one that sold (yipee!) and to check out the museum which has recently been refurbished. We didn’t have enough time there really – it is a great museum inside Taunton Castle and I learned a lot about Somerset,  including its Roman history and about  the Monmouth Rebellion and the Battle of Sedgemoor.

It hailed on us while we were in Taunton.  How rude! – and it was chilly too. However when the sun came out it was lovely and warm.

Dinner turned out to be a mix of seasons just like the weather – roasted vegetables, stir fried vegetables and salad and flan. The roasted veg took about an hour in a hot oven and I used potatoes, sweet potatoes, carrots, red peppers and mushrooms all cut in various sizes. Put everything in a bowl together and add a tablespoon of olive oil, some salt and pepper and a spoonful of dried herbs, mix it with your hand then put it in a lightly oiled roasting pan.  Remarkably, everything seems to get cooked the right amount in the same time.

The flan was tofu, feta cheese, spinach mashed together with a couple of eggs and some milk to make it gloopy and half a dozen cherry tomatoes (sliced in half and put on the bottom of the pastry before the other stuff was poured over) cooked for about 50 minutes.  The stir fried veg were shredded cabbage, sliced mushrooms, beanshoots, and sweetcorn kernels seasoned with a few glugs of soy sauce and this was dolloped on top of a green salad of young spinach leaves, watercress and rocket – this way Arlo doesn’t notice the rocket.

We ate this while watching The Voice – a daft programme really, but most of  the judges are people I’ve heard of , there’s no one really awful (Simon Cowell for instance) and because it’s the BBC there are no adverts. Could be a lot worse.
