Chasing away winter

The weather is still not what it ought to be for May, so I’m trying  different tack. Instead of moaning about rain and cold I’m aiming to pretend that it’s warm and sunny. I’m going to cook things which have a summer feel to them and use summery ingredients and that way I might effect change.

Summer fruit muffins are today’s offering. The fruits are frozen raspberries, blueberries, redcurrants, blackcurrants and blackberries – some of the blackberries were huge and I wasn’t sure how they’d turn out, but it was all good.

Put 2 cups of self raising flour and three quarters of a cup of sugar into a bowl and mix. Add half a cup of sunflower oil,  a cup of milk, an egg and half a teaspoon of baking powder (probably should add a bit more) and mix lightly. Then add two cups of frozen berries and mix. Put into muffin tins and bake for about 25 minutes in a hottish oven. Eat while warm. “Chasing away winter?” said Arlo. “It’s not gonna work y’know”
