So maybe I was a little hasty about the weather. The rain is invisible in this photo, but it was there. No matter, I’m keeping on with the summer foods.

Today Grannie bought round some gooseberries and blackcurrants from her freezer which had been given to her by Gladys. It wasn’t entirely an altruistic gift – she doesn’t really like either (” I don’t really know what to do with them dear – too many seeds”) and prefers plums.

“I expect you’ll put them on your blog” she said. Maybe she’s really a shameless self publicist? Probably not, but I can’t disappoint her.

These are vegan muffins – but you wouldn’t really know it to taste them. Put 2 cups of self raising flour into a bowl and add half a cup of sugar (more if the fruit you are using is very tart) a teaspoon of baking powder and a pinch of salt. Mix together. Put half a cup of soya milk (or rice milk) into a jug, add half a cup of olive oil (not too strongly tasting )and half  cup of soya yogurt – mine was lime flavoured (nice) Mix together well and then pour into the flour and sugar. Stir until combined and then add 2 cups of frozen fruit. Put into muffin tins and bake for about 35 minutes in a moderate oven. Best eaten warm.
