French bread pizza

Blue sky three days in a row! I went out without a coat and wasn’t cold!! But there seems to be an air of anticipation tinged with weather dread among people that you meet – a feeling of impending weather doom – or is it that the weather lacks conviction? It’s a bit disconcerting.

So on with the summer cooking.

The fridge yielded red peppers – long thin ones rather than capsicums – chestnut mushrooms, courgettes, carrots and broccoli. There was salad stuff too and cheese  and three quarters of a bottle of tomato passata which needed using (and a cauliflower which I’ll save for another day).  French bread pizza with carrot and courgette stir fry and broccoli seemed like a good idea.

The Co-op supermarket sells the best French bread in town and oddly it’s cheaper if you buy it with sesame seeds on it.
 Slice some mushrooms and put them in a pan with some olive oil and salt and pepper and bung them in the oven (or cook on the hob) until they’re soft. Grate a courgette and a carrot and cook them together in a pan with a little oil until they’re softish, then add some tamari or soya sauce just before you serve them.

Chop a red pepper – in my case I have to watch my son’s fingers as he likes a bit of raw pepper – put it in a pan with a little oil and cook until it’s soft, then add some passata and salt and pepper and cook together for about 10 minutes.

Slice a french stick up and then cut the pieces in half and put them on a baking tray. It can be a bit of a challenge fitting them in if you cut them unevenly – adds to the fun. Smear each slice with the tomato and pepper mix then put mozzarella cheese and mushrooms on top and bake until the cheese has melted. Serve with the carrot and courgette mixture and broccoli.
