The best cake covering

A chocolate ganache is one of the simplest and best things  to decorate a cake with especially if you have language students staying with you as we do. Frank and Peter were very happy with the cake. Arlo and Rella couldn’t believe their luck especially as it was no one’s birthday.

I should have waited though as it’s Peter’s birthday on Friday and Arlo’s on Tuesday.

I’m worried I may have peaked too soon!

Break 3oz good quality chocolate – at least 60%cocoa solids –  into pieces. Put 4fl oz double cream into a saucepan and slowly heat it until it boils. Remove from the heat, add the chocolate pieces and stir until they have melted.

Leave to cool (in the fridge but not for too long) and then beat the ganache to thicken it.

This will cover a 9inch round cake very generously.
