The joys of forest camping #2

When I implied that our camping meals are simple fare I was forgetting Oscar’s cake making ability. Last year we were treated to a  fruit pie that really has no business on a campsite – was it raspberry? I can’t remember, but I do  remember that the whole thing was  delectable, especially the pastry which was crisp and delicious. It does help that Oscar lives in Suffolk and has access to a kitchen whereas we are visitors passing through, but homemade cake on a camping holiday is the business.  This year he made carrot cake.

I’m not quite sure of the recipe – I’m pretty sure there were 200grammes of grated carrots ( I asked him, but I’m not good with metric), and I also know that he left the sultanas out because he didn’t have any(this was agreed to be an improvement) and that some ginger snuck its way into the cake too and lastly I know he added fresh orange to the icing rather than orange juice.

I think the recipe probably goes something like this: put 200g(7oz) self raising flour and 175g (6oz) brown sugar in a bowl and mix. Add 1 tsp ginger powder and a pinch of salt. In a separate bowl put 175g (6fl oz) oil and 3 eggs. Mix and add to the dry ingredients. Then add 200g (7oz) grated carrots. Bake in 2×8″greased lined tin for about 40 minutes at 169c. Ice when cool with a mixture of cream cheese, icing sugar and orange juice – see below. Eat with friends in the sunshine on a forest campsite – if the temperature can nudge 28c that’s even better.

Oscar iced the cake on the campsite – there’s culinary poshness for you – so that the cake wouldn’t go soggy. This meant that I could scrape the last of the icing out of the bowl. It’s a pity I don’t have the exact icing recipe because it was very nice indeed….over to you Oscar….
