vanilla and chilli

Having used half a jar of vanilla sugar in my polenta plum cake, I thought I’d better replenish it. A vanilla pod can, apparently, infuse sugar with its flavour almost indefinitely.

I knew that this is something that I’d have to try out, so I removed the pod from the remains of the vanilla flavoured sugar (which I’ve stored securely) and I’ve encased the pod in more caster sugar. This sugar is refined, white whereas the previous lot was golden caster. Will it make a difference?  Watch this space.

While I was thinking about sugar, the bowl of chillies on the table continued to catch my eye. I have been using one every now and then – I used one today in a tomato sauce for instance – but they do need a purpose – other than the obvious one of adding a bit of heat to something.

I was wondering whether chilli sugar might be a goer?…it’s probably worth a shot. Could really spice up a vegan cake…
