Bees and coconut cake

The beloved and  I have just returned from a Friends of the Earth meeting at which Phil Chandler, aka the  Barefoot Beekeeper, was speaking. Somewhat disappointingly I felt,  Phil wore shoes,  but he talked about all kinds of things bee  related including  upsetting things about US almond tree pollination. I’m inspired to get the beloved (he does the gardening) to learn more about Bee Friendly Zones.

Anyway, while we were out Rella and Boyf  looked after Arlo. They had pizza in front of a film (Monsters Inc – Rellas’ reliving her childhood). There was coconut cake, but they chose to eat ice cream. It’s nice coconut cake too. Easy to make and nicely crumbly. Their loss.

Put 2oz dessicated coconut in a suitable container and add 4fl oz boiling water. Mix well and leave to cool a bit.

Put 40z soft butter and 4oz white sugar in a bowl and mix well. Add two eggs – yolks first then whites and beat well.  Mix in 6 oz self raising flour and the cooled coconut and the liquid. Stir well and put in a greased, lined 8″square baking tin and bake for about 35 mins at 160c.

The cake should be a white cake so shouldn’t cook until it gets brown. Ice with butter icing mixed with two tablespoons of dessicated coconut which have been softened in a little water. Serve on a pretty plate.
