how not to make ganache

This is an old picture of a rather fine chocolate cake with a ganache icing. I’m posting it because Boo and I made a cake using the same recipe yesterday, but our ganache didn’t go quite as it should have done – it split and went grainy. We used equal amounts of cream and chocolate, as I usually do  – ie 200g chocolate and 200ml of cream –  boiled the cream, added the chocolate once the cream was off the heat and beat it; but it wasn’t having any of it. It looked like a dog’s dinner.

So I boiled up more cream – a lot more –  an extra 200 ml in fact  – added the lumpy chocolate that looked as it it was beyond redemption, stirred it and it was fine. Now what’s that all about?

Anyway, it’s Beth’s birthday today and she’s 17. Happy Birthday Beth!
