over indulged…

Rella went food shopping today and bought pizza and curly chips so I didn’t have to think too much about what to eat for dinner – though I did steam some broccoli and cauliflower and stir fried some  mushrooms and Pak Choi (which I bought from Annie’s fruit and Veg shop this morning).

foraging-rabbit2As I was cooking Peaches came sniffing round to see if there was anything she could forage. I gave her an apple, but it turned out that someone had put something tasty in the compost bin so Peaches had to retrieve it. Normally she would have pulled the bin over, but I think it was a bit too full. This is the rabbit that won’t eat sprout leaves, but who is more than happy to eat an old tortilla wrap. I don’t know what the world’s coming to.

I turned my attention to a dessert of some kind. Incredibly we still have leftover chocolate from Christmas. It seems very strange – wrong even –  that something like chocolate can make it to the world of the leftover, but that was the case.  I thought I’d make brownies and use it up.

There were 5oz of chocolate (if you discounted the mint chocolate, which I did) so I put it in a bowl with 2oz butter and slung it in the simmering oven to melt.brownies

Meanwhile I dug out the tin of Quality Street which still had a few chocolates in – coconut ones mainly (and no toffees!) – and unwrapped those and chopped them up.


When the chocolate and butter was melted I added 6oz sugar – a mix of white granulated and dark muscovado – and mixed it together.

Then I added 3 eggs and mixed it together before adding  3oz self raising flour, half an ounce of cocoa, and a little water.  I stirred it and then added the chopped chocolates and then piled the lot into a lined, 8″square tin and baked it at about 190c for 35 minutes. It looked nice and shiny and very chocolaty. Peaches was sniffing the air.
