another unexpected transformation

The bananas in the fruit bowl look like this. Not great. Only Rella likes them like this and even she’s a little daunted.  Arlo doesn’t like bananas under any circumstances, but it’s OK because he’s gone to Southampton with Halo and Damon for a fun filled few days.

So it was just the beloved and me for dinner. We celebrated by having really grown up food – burgers and hash browns with some stir fried vegetables (the beloved cooked). As for the bananas, if you don”t want to make a banana bread – and let’s face it there’s only so much banana bread you can eat  – you need to make a banana dessert/smoothie using coconut milk.coconut-milk

Just like the Pringles and cheese yesterday, bananas and coconut milk are a match made in heaven. Chop 2  large bananas roughly and put them in a blender and add up to a can of coconut milk and whizz up. If you want a smoothie, add apple juice or orange juice – otherwise it’s a thickish, yogurt-type dessert  – and dairy free and delicious too.

    What a good idea. I just made banana cake, but this is much easier.
